Overview

Harissa sauce is a really strongly hot sauce based on chili peppers.

Traditionally, this sauce is kept in bocaux, and covered witha good layer of ove oil, and kept in the fride.

Ingredients

Sweet (basically not strong) bell peppers;

Really strong chili peppers

Garlic

Preparation

Wash the chili peppers and the bell peppers and boi them for 10 minutes

Peel the garlic and blanch for 1 minute in boiling water.

Drain the peppers and cool them with cold water

Cut the ends off of the peppers and chili and cut them longitudinally before removing the seeds. Leave to drain.

Mix the garlic, peppers and chili  and pour the mix in a bowl , and add salt

Put in a jar and pour a layer of oil

This harissa sauce is very well kept and can last up to six weeks in the fridge.
